How Cook Lobster Tails - Boiling
First of all to cook lobster by boiling, you first need to insert a wooden skewer down the length of each lobster tail so they will not curl during the cooking process.
# Next is to fill a large sauce pan or a stock pot about 2/3 full and add about 1 teaspoon of salt for each quart of water
# Place the pot over high heat until the water is boiling
# Place the lobster tail(s) into the pot and continue boiling for:
3 minutes for three ounce tails
4 minutes for four ounce tails
5 minutes for five ounce tails
6 minutes for six ounce tails
7 minutes for seven ounce tails
8 minutes for eight ounce tails

# Drain the pot and remove the lobster tails

How To Cook Lobster Tail: Boiled Lobster Tails
Start with thawed lobster tails. Fill a pot with enough water to cover up to 4 tails (seasoning is optional).Bring the water to a boil and gently put tails in the pot.
Wait for water to reach a slow boil (small bubbles), then reduce heat (set timer for 3-1/2 minutes), and simmer uncovered.
After 3-1/2 minutes, remove all lobster tails from the pot but keep water on stove.
Test just one tail for doneness. Use a knife to cut through the soft underside of the shell, into the thickest part of the lobster tail meat. If it appears completely white with no sign of translucent grayish color, then they’re all ready to serve. If there is still some translucency or the roe (eggs) appears black & shiny, put the lobster tails back in the water for one-minute increments until done (eggs turn a bright orange/red when cooked; if you don’t want to eat them, just rinse off).

If you have your lobster tails frozen, you should defrost them either in the refrigerator for about eight hours, or in the microwave. They're more tender if you defrost them before cooking.
Broiling lobster tails
The following is a good way to stop the lobster tails drying out (which they sometimes can do if cooked under the broiler/grill).Use kitchen scissors to cut the tail down the hard shell of the back
(cutting the shell only, not the flesh. Leave the fan tail intact). Lift out the meat through the slit in the shell so that the flesh will be exposed to the heat.Put the tails in a shallow pan with a little water in the bottom, with the underside, the membrane side, of the tails uppermost. Brush
with butter or a little oil. Broil (grill) at a distance of 4 inches. Then turn, brush the other side with butter or oil and continue cooking.
Total cooking time will vary enormously (between quick cooking of about 3 minutes to up to 15) according to the weight of the tails. You'll need to pierce the flesh with a sharp knife from time to time to check progress. You're looking at about a minute per ounce (25 g).Broiled lobster tails are delicious served with garlic butter!

How to cook lobster tail
Today we are going to show you how to prepare a lobster tail. we will actually break down a whole lobster for you and show you how to do all that but for today's intents and purposes, sometimes you don't want to have to mess with breaking down a whole lobster and the extra meat that you get really just comes from the claws. So a whole lobster essentially is just for a center piece.
What we are really getting out of it is the protein in the tails. You can buy the tails separately at a good seafood market. I've got a 4 ounce Main Lobster tail here and I am going to show you how we get that really nice kind of cauliflower appearance on the top that you see on a lot of restaurant menus and cookbooks and such. It is real easy to do. I've got some culinary shears here and what we are going to do is just simply cut down the center of the top of this lobster
tail.
We are going to go through this shell up to right about there; not all the way to the end because we will cut it completely in half which is what we are trying to avoid. So I just want to pull the
shell with my thumbs gently left to right; that's okay if it starts to crack a little, that's fine too. From the underneath side I will just separate with my thumbs and my fingers the flesh from the
shell. I'm not using a knife or anything like that. It is just kind what I want to do with my fingers, a little bit more gentle procedure. So as you can see you can actually see my thumbs through
the skin there.
We are just gently pulling this tail meat out from the shell. It's a little trickier toward the base. There we go. All right. So now we've got that separated and what we are going to do is lay that back across the top of the tail and we are going to clean up some of this. Already you see we are going to have this a nice flowered looking tail that sits on top of the lobster shell itself. So that's that.
All I've got to season with is I am going to use basic mixture and what I am going to be using is a garlic salt along with some herbs. It's just a blend. I am just going to kind of sprinkle those across the flesh, not real heavy. Just get a nice even coating there. I've got some clarified butter that I will brush over the top of this guy. I am just using a saute pan. What is going to happen is we are just going to broil this in the oven and about mid-way through the cooking process we will open the door and re brush it with some clarified butter to keep this meat nice and moist. It is a very very short cooking time simply because seafood as a whole doesn't take that long to cook but also we are using broiling heat in the oven which is a very intense heat from the top which is quite high. So we want to keep an eye on this fellow.
It is only going to take a few minutes but midway through we are going to brush him back down with some clarified butter. So before and after we will use the clarified butter and we will cook them all inclusive in this pan and we will come back and take a look at the finished product and the brushing of the butter; that is part of the procedure as well.

4. Drain the lobster tails and serve hot with melted butter, lemon juice or mayonnaise.

1. Pour 1 cup of water into the bottom of a pan and add salt.
2. Bring the water to the boil.
3. Insert a wooden skewer or cocktail stick down the length of each lobster tail. This will prevent them from curling up upon steaming.
4. Place the tails on a steaming rack placed inside the pan and cover with a lid.
5. Steam the tails for about 7 or 8 minutes, drain and serve hot.

3. Once the water has reached a fierce boil, drop the tails in and cook for 4 minutes.

5. With a sharp knife, split the soft top shell of the tail, lengthways down the middle, but leave the hard shell underneath in tact.
6. Pour some melted butter and lemon juice over the meat of the tails or brush a marinade of lemon juice, olive oil, salt pepper, garlic powder and paprika over the meat and place shell side down into a pre-heated grill.
7. Grill for approximately 7 - 8 minutes under a medium - hot heat or until the meat is opaque, no longer transparent and firm to the touch.
8. If you wish, you may turn the tails over half way through cooking.
9. Remove from the grill and serve hot with lemon, melted butter or mayonnaise.
