Step 1

Go to the market and pick out your lobster. The best thing that I recommend is to go directly to the butcher. Let them know what you are doing, and they will get you the perfect lobster for
the job. If for some reason they don't know, let them know you are looking for 6oz portions of lobster tail.

Step 2
Prepare the lobster. If lobster has been in the fridge for awhile or if you froze them you will need to let them sit for a little bit. This will make the lobster a little easier to work with.
You do not want to let it sit for too long as that can be dangerous, but long enough that your not dealing with a frozen lobster tail.

Step 3
Starting in the center of the shell cut down the back of the lobster, all the way to the base of the tail. make sure that you only cut the shell and not the meat.

Step 4
Prepare the the lobster meat. Grab both sides of the shell and gently pull the shell away from the meat. The trick here is to pull the shell completely away EXCEPT for the back. You want the shell to remain attached at the back of the meat.

Step 5

Lift the meat from the shell. Grasp the shell underneath and close the gap so the two parts of the shell are connected.

Step 6

Lay the meat on top of the closed shell. Make a small incision with a knife down the center of the lobster meat. Grab the two loose sides of the meat and pull them over each side of the shell. Throw some of your favorite marinade on top and you are set to cook!

Step 1
Take the lobster tail and lay it shell side up. Cut down the length of the shell with a sharp pair of scissors, stopping when you reach the fan tail end.
Step 2
Gently pry the shell apart, working it away side to side to reveal the meat inside.

Using your thumbs, push down the sides of the lobster tail, lengthwise, to release the tail meat. Leave it attached at the fan tail end. It may take a few minutes to scrape the tail free of the shell.
Step 4
When you have gotten the meat free of the shell, pull the entire piece of lobster tail meat clear and lay it on top of the shell. If it is a cooked tail, you can easily eat it now. If it is an uncooked tail, broil or grill it with the shell still attached for an elegant presentation. Otherwise, detach the lobster tail at the fan tail end.

First, prep your thawed tails. With kitchen scissors or a very sharp knife, cut lengthwise through the top of the lobster shell (the round, hard side of the shell). Note: When cutting the shell, you
will also be cutting through the meat which is okay - this butterflies the meat for you and makes a very nice presentation. If you wish to remove the digestive tract (the dark line that runs along the length of the tail), this is a good time to do that as well.

Insert a long metal skewer lengthwise in each tail to keep it from curling. Then we recommend parboiling before grilling. Drop the lobster tails in a pot of boiling water. When the water returns to a soft boil, reduce heat, set timer for the instructed time and simmer uncovered for the remainder of the time. Remove the lobster tails from the water.

Lay the lobster tails on their back side, with the soft underneath side of the shell facing up. Take a knife and cut through the shell lengthwise down the middle. Prying the shell open, pour melted butter and squeeze lemon juice right into the meat. Grill with the cut side facing up, at medium-high heat or broil on low for the time below or just until done.

Step 1
Cut the tail down the hard shell of the back, cutting the shell only, not the flesh. Leave the fan tail intact.

Boil the tails in salty water. As a rough guide, allow about a minute per ounce plus about two more minutes.

Start with thawed lobster tails. Fill a pot with enough water to cover up to 4 tails (seasoning is optional).Bring the water to a boil and gently put tails in the pot.
Wait for water to reach a slow boil (small bubbles), then reduce heat (set timer for 3-1/2 minutes), and simmer uncovered.
After 3-1/2 minutes, remove all tails from the pot but keep water on stove.

Test just one tail for doneness. Use a knife to cut through the soft underside of the shell, into the thickest part of the tail meat. If it appears completely white with no sign of translucent grayish
color, then they’re all ready to serve. If there is still some translucency or the roe (eggs) appears black & shiny, put the tails back in the water for one-minute increments until done (eggs turn a
bright orange/red when cooked; if you don’t want to eat them, just rinse off).

If you have your lobster tails frozen, you should defrost them either in the refrigerator for about eight hours, or in the microwave. They're more tender if you defrost them before cooking.


Broiling lobster tails
The following is a good way to stop the lobster tails drying out (which they sometimes can do if cooked under the broiler/grill).Use kitchen scissors to cut the tail down the hard shell of the back
(cutting the shell only, not the flesh. Leave the fan tail intact). Lift out the meat through the slit in the shell so that the flesh will be exposed to the heat.Put the tails in a shallow pan with a little water in the bottom, with the underside, the membrane side, of the tails uppermost. Brush
with butter or a little oil. Broil (grill) at a distance of 4 inches. Then turn, brush the other side with butter or oil and continue cooking.

Total cooking time will vary enormously (between quick cooking of about 3 minutes to up to 15) according to the weight of the tails. You'll need to pierce the flesh with a sharp knife from time to time to check progress. You're looking at about a minute per ounce (25 g).Broiled lobster tails are delicious served with garlic butter!

You can boil the entire tails in salty water.
As a rough guide, allow about a minute per ounce (25g) plus about two more minutes. (For example if they weigh about 6 oz (175 g), boil for eight minutes).

Preheat the oven to 400F (205C), brush with butter or oil, and bake for 8-10 minutes.
